Pumpkin Biscuits

If your garden has produced an excess of pumpkins, here's a tasty recipe to fill you up on a cold winters' day.

Ingredients

1 and 1/2 cups sugar

2 cups (cold) cooked pumpkin

1 cup oil (almond is good)

2 tsp vanilla essence

4 cups SR flour

1 tsp  salt

1 tsp salt

1 tsp cinnamon

1 tsp nutmeg

1/2 tsp ginger

2 cups sultanas 

 Method:

1. Combine sugar, pumpkin, oil and vanilla essence

2. Sift flour, salt and spices

3. Fold flour mix into pumpkin mix

4. Mix in sultanas

5. Drop 1/2 tb's mix onto trays lined with baking paper*

6. Bake 15-20 minutes in a moderate oven**, or until golden brown

 Notes:

* To keep baking paper on place, grease tray with butter first. 

** Moderate oven is 375F or 180C.
